Renowned Italian chef Francesco Mazzei has been on a mission to find the best ingredients from around the UK to make the perfect gourmet Italian meal.
He makes the simple and sophisticated dish by combining mascarpone with the blue buffalo cheese from Laverstoke Park Farm. Dried fruits and nuts are added to the dish to cut through the strong cheese, which is finished with a drizzle of jus and whole small mint leaves.
