Ingredients
200ml Alpro Oat Original drink
100g spinach
250g wholemeal flour
1 tsp baking powder
1 large egg
pinch of grated nutmeg
2 tbsp pumpkin seeds, to serve
1 tbsp sunflower oil
4 tbsp Alpro Simply Plain soya alternative to yogurt, to serve
handful cherry tomatoes, to serve
Method
1 Heat oven to 160C/140C fan/gas 3. Add the Alpro Oat Original, spinach, flour and baking powder to a blender, crack in the egg and season. Sprinkle over the nutmeg and whizz to a smooth batter.
2 Toast the pumpkin seeds in a dry non-stick pan, then set aside for later.
3 Add the oil to the pan, pour in 3 tbsp of batter, cook for about 1 min until the pancake begins to bubble. Flip and cook on the other side. Keep warm in the oven while you cook the remaining pancakes.
4 Serve with a dollop of Alpro Simply Plain, the tomatoes and a sprinkle of the seeds.
